Escalibada
You have all probably come across escalibada whether you are aware of it or not. It is a traditional Spanish accompaniment to many dishes, normally eaten hot and really easy to make. It freezes well so is a great way to use up some over produce. Ingredients: Aubergine (s) Pepper (s) Method: Place the whole aubergines and peppers in a baking tin with a little olive oil. Roast for about 45 minutes at around 220 degrees until the pulp is very soft. Remove from the oven and allow to cool. When cool remove the skins from both and the seeds from the peppers. Mash together with a fork. And that's it! Enjoy. |
