Has anyone got the recipe for spotted dick? I'm cooking for some Spanish friends and they asked for something traditional. Well, my Nan always said you can't get anything more traditionally British than a spotted dick!!! :o

50g Butter
350g plain flour
3 tsp Baking powder
140g shredded suet
85g caster sugar
115g currants
finely grated zest and juice of 2 Lemons
75ml Milk
75ml whipping cream
custard or clotted cream, to serve

Method
1. Soften half the butter and use to grease a 1.4 litre pudding basin.

2. Combine the flour, baking powder, suet, sugar and currants in a large bowl, mixing well.

3. Melt the remaining butter and stir into the flour mixture.

4. Stir in the lemon juice and zest.

5. Combine the milk and cream in a small jug. Slowly stir enough into the mixture to bring it to a dropping consistency.

6. Pour the mixture into the pudding basin. Cover with a double layer of greaseproof paper (make a pleat in the middle to allow for expansion), tied in place with string.

7. Place the basin in a steamer basket set over boiling water. Cover and steam for about 1 - 1 1/2 hours until cooked. Check the water level now and again to make sure it doesn't burn dry.

8. Serve with custard or, if you're feeling wicked, a big dollop of clotted cream.

Thanks, that was quick! I thought I'd have to stick to stiffy toffee pudding after Nige censored my Richard!!!

You might have probs getting the suet (unless anybody knows where it's available.) ?

Th UK has banned the name of this pudding and it is now referred to as Pimpled Richard

My nephew Richard who is covered in acne is deeply offended by the use of the phrase "pimpled Richard.
A spotted dick is a SPOTTED DICK,.......there i've said it, and leave my family out of it!!!!! :)

Calm down......don't blame the moderators! The Forum software (which of course comes from the US where I'm sure there are many Richards) has a word filter and your favourite English pud happens to be in there!

It was one of the local councils in Scotland ( Flintshire, I believe) that decided to change the name spotted dick to spotted richard because of of the staff that used the canteen kept making 'childish and immature comments' that annoyed one of the canteen staff. However they received so much bad publicity for doing so that they have now agreed to change the name back to spotted dick.
to quote them, ' ...if we offend any spotted Dicks in the process then tough, they can eat jam rolly poly instead'

Blimey Viking,however did your namesake make it across the North sea all those years ago.Last time I was  in Flintshire,2 months ago,It was just across the Cheshire border in Welsh Wales where the famous pudding is  actually called spythyd dllck.

We bought suet in the English shop in Sabeco last week, and it was definitely not out of date !!

Give poor Richard a rest and offend William instead by calling it Spotted Willy.

Flintshire council has reversed its decision to rename the pudding Spotted Dick, after accusations of political correctness.

Canteen bosses had decided it would be called "Spotted Richard" after "several immature comments from a few customers".

But following criticism from employees and angry correspondence from people around the UK, the council has announced the dessert will be reverting to its traditional name.

The council's chief executive, Colin Everett, told the BBC: "Although the majority have seen the humorous side of the story, the impression given in the media that the council might have been 'politically correct' has led to some derision and, sadly, to a number of abusive letters being sent in from across the country."

Mr Everett explained that the name had been changed to "Spotted Richard" in light of the "childish comments of one regular customer.

"Spotted Dick will be back on the menu under its proper and proud name. In future, any customers who act in this childish way will be asked to behave properly or will be refused service," he added.

Klaus Armstrong-Braun, a Flintshire councillor, said: "It's a great victory for Spotted Dick and for everyone who makes it. It's made Flintshire a laughing stock all over the world. I've had lots of letters criticising them.

"It's all the more ridiculous when we now learn that only one person was responsible for making smutty remarks which led them to get rid of something which has been a tradition for more than 150 years."
