We have a glut of tomatoes and have tried to bottle them whole in brine, after 2 weeks they started to ferment even tho they were in the fridge, does anyone know how to preserve them apart from making chutney? :(

We make Tomato Frito.
Put the tomatoes in boiling water for a minute or 2 then into cold water. This lets you remove the skins easily.  Fry them in olive oil for 15-20 minutes. Put them into clean jars with the tops loose. Put them in a pressure cooker for 10 minutes to kill off any bugs. Remove carefully and tighten down the tops.

Hi Chris,

A local neighbour just hangs them in a dark shed. They will dry slowly in a few weeks. When they are dry enough you can put them on oil with garlic, basil etc..

I find my local Cataloonian neighbours are allready dry enough,but I would like to try hanging a few of them in a dark dry shed !
