Hi,
Can anyone tell me how to cook the salted cod that is for sale in the shops and markets? Do you have to soak it before you cook it to get the salt out? :-/

Yes, for several days, changing the water every few hours - if not yuck!
Then you can use it like normal raw fish but it tastes nothing like fresh cod even when de-salted..

Oh for a fish and chip shop...

Go in Manolo's place in the market.They do a nice battered cod if you're missing Blighty.

Is this a frozen foods counter? Tortosa market?
Or, if you buy fresh fish and make your own beer batter, this is
really nice.

Try this recipe. It works but DO soak for 24 hours first.

In fact all he bacalao recipes for salted cod are fantastic, just use the basics and adjust to your own liking. You can even curry it, sweet and sour it. But don't cover it in batter like nobby does, so uncouth  ;)

Love cooking with it. Can vary as to how long you need to 'de-salt' it .

Technically it's not raw is it ?,although raw fresh fish is nice.
