Mediterranian fried rice

Ingredients - serves 2:
1 glass rice
2 glasses water
pinch of salt

1 Normal or 2 dwarf aubergines
1 medium onion
1 medium green pepper
1 large tomato
1 egg
Olive oil
1/2 tsp ground corriander
1/4 tsp ground ginger

optionally
peas
prawns


If you are adding prawns then defrost them in advance.

Put the rice, water and salt in a saucepan. Heat until boiling then reduce to simmer until the water has all evaporated.

Remove the top and bottom of the aubergines, cut into rings then into cubes.  Heat some olive oil in a saucepan and fry the aubergines
until they just start to brown. Remove and put in a bowl.

Peel and dice the onion and fry in the oil until just starting to brown. Remove and put in a bowl.
Dice the pepper and fry in the oil until soft. Remove from the heat and put in a bowl.
Chop the tomato into slices, removing the stem, and fry for a few minutes until the sauce reduces to about 2/3. Remove and put in a bowl.

Clean the pan, add some oil and return to the heat.  Whisk the eggs and add to the pan. Cook as if making scrambled egg.

The rice should be ready while you are preparing the other ingredients.

Add some oil to a wok, heat and add the rice, corriander and ginger and mix. Add the 'scrambled egg'.
Add the bowls of ingredients and mix. If you want to add peas then add these now (assuming they have been cooked).

Continue to fry the rice, turning occasionally.

Finally add the defrosted prawns and continue to fry for a few minutes.
