Olives wanted recipe for salt pickling

I have tried for several years, soaking sometimes with caustic soda, last year without but they seem to end up too bitter to eat.  Who knows how to do it? Huh

Often thought myself...with about 100 trees,friends and family around picking in the afternoon warmth,red wine,tapas,children and dogs running around.After a years hard work of pruning,tending and caring,spreading the nets, what can be more satisfying as to say " these are mine and I did it"

I've been pickling some of my olives for the last few years.  All of what Ewan says is "valid"  Wink But can be simplified a bit.  For the soaking I just use a clean plastic bucket and use a dinner plate on top to keep them submerged.  Doing one bucket full will be more than enough for one year's consumption unless you're an olive addict.
For the brine solution you want a "saturated solution" i.e. that you cannot dissolve more salt in.  The method the locals use is to keep adding salt (an stirring to dissolve) until a fresh egg floats in it.
For some reason my last batch still tasted a bit salty when eaten but I don't know why that was.  I just give them a rinse and drain.
The olive oil on the top of the jar is to keep the air out.

I notice our local Wednesday market has a stall with about 20 varieties of olives. Does anyone know which are the best to buy just to eat with a glass of wine. Tips on what to look for in the various white buckets ! I don't fancy going into my waving of arms, Book, Film, Play routine with the seller  Embarrassed

I'd have thought they'd let you sample them.  No two buckets the same I'd have thought.  Bought some nice stuffed ones at a Fira and didn't ask the price beforehand.  A bit pricey.  Have you tried supermarket ones ?
