We have a glut of tomatoes and have tried to bottle them whole in brine, after 2 weeks they started to ferment even tho they were in the fridge, does anyone know how to preserve them apart from making chutney? Sad

We make Tomato Frito.
Put the tomatoes in boiling water for a minute or 2 then into cold water. This lets you remove the skins easily.  Fry them in olive oil for 15-20 minutes. Put them into clean jars with the tops loose. Put them in a pressure cooker for 10 minutes to kill off any bugs. Remove carefully and tighten down the tops.

Hi Chris,

A local neighbour just hangs them in a dark shed. They will dry slowly in a few weeks. When they are dry enough you can put them on oil with garlic, basil etc..

I find my local Cataloonian neighbours are allready dry enough,but I would like to try hanging a few of them in a dark dry shed !
